VANILLA BUTTER CUPCAKES



Entri hari ini nak share recipe Vanilla Butter Cupcakes yang sangat marvellous ni dari Buku Resipi "Favourite Cupcakes and Cheesecake" saya.  Sebenarnya buku ini lama sudah dibeli, dok simpan kat bookshelves tu. Tetiba teringin pulak nak buat cupcakes yang comel-comel ini.  Tu yang buat semalam walaupun dah lewat jam 10 malam tapi memandangkan senang saje nak buatnya, tu yang go ahead juga.  Cupcakes comel ini boleh dapat 12 biji ye.  Guna ice-cream scoop untuk mendapatkan quantity yang sama dalam satu paper cup.

Anyway, sorry ye because recipenya dalam bahasa Inggeris tapi I am sure sume boleh faham. Senang, mudah dan sedap cupcakes ini.  Saya buat malam semalam, ingatkan nak letak frosting petang ni balik office, tengoklah dulu kalau rajin tapi tanpa topping pun sedap juga cupcakes ini.  So if you all rajin dan nak tengok cupcakes yang lebih cantik dan menarik, bolehlah letak toppingnya.


Selepas frosting, inilah hasilnya....they are so so delicious...so easy pulak tu nak buat frosting dan decorate cupcakes ini....sangat comel kan?




Recipe from This "Favourite Cupcakes and Cheesecakes" where over 100 fresh and tasty recipes to enhance any kitchen library.  All recipes tried and tested.

Ingredients

  • 3 eggs
  • 1 cup butter, softened
  • 1 cup castor sugar
  • 1/2 cup buttermilk
  • 1 1/2 cups self-raising flour, sifted
  • 1 teaspoon vanilla extract

Topping

  • 1 1/2 cups icing sugar
  • 1 cup butter, room temperature
  • 6 drops vanilla extract
  • Coloured confectionary sprinkles (available from cake decoration store)

Method

  1. Prehear the oven to 160 deg celcius.  Line a 12-cupcake pan with cupcake papers.  In a medium-sized bowl, lightly beat the eggs, add butter and sugar then mix until light and fluffy.
  2. Add buttermilk, flour and vanilla, and stir to combine.  Beat with an electric mixer for 2 minutes, until light and creamy.
  3. Divide the mixture evenly between the cake papers.  Bake for 18-20 minutes until risen and firm to touch.  Allow to cool for a few minutes and then transfer to a wire rack.  Allow to cool fully before icing.

Topping

  1. Meanwhile combine half the topping ingredients except sprinkles, and mix with a wooden spoon until mixed together, add remaining ingredients and beat with the spoon until light and fluffy.
  2. Spoon topping onto cakes using the back of a spoon and decorate with coloured sprinkles.
